Wrap it Up!

Delicious cold food and a glass of ice-cold beverage is all you need to survive a hot summer afternoon! Instead of having a boring bowl of salad I decided to make cold lettuce wraps with spicy peanut sauce!

 

Spicy Peanut Sauce

Ingredients:

  • Olive Oil – 2 Tbs
  • Onion – 1/4 Cup
  • Chilli Garlic Paste/ Sauce – 2 Tsp
  • Red Pepper Flakes
  • Garlic – 1 Medium Clove (Minced)
  • Water 1/2 Cup
  • Creamy Peanut Butter ย – 1/4 Cup
  • Tomato Ketchup – 3 Tbs
  • White Sugar – 1 Tbs

 

Method:

  1. Heat olive oil in a pan (medium heat), add onion, chilli garlic paste/ sauce, red pepper flakes, and garlic until the onion is slightly tender
  2. Add water, peanut butter, ketchup and sugar to the onion mixture
  3. Cook until the mixture is smooth (Stir occasionally)
  4. Reduce heat to low and simmer until the sauce is thick like a paste

 

 

 

Lettuce Wraps

Ingredients:

  • Lettuce – 8 to 10 leaves
  • Olive Oil – 2 Tbs
  • Onion – 1/4 Cup
  • Garlic – 2 Medium cloves (Minced)
  • Ginger – 1/2 Tsp (Minced)
  • Green Chillies – 2
  • Black Pepper – 1/2 Tsp
  • Soy Sauce – 1 Tsp
  • Mushroom – 1/4 Cup
  • Sweet Corn – 1/4 Cup
  • Green Peas – 1/4 Cup
  • Carrots – 1/4 Cup
  • Green Beans – 1/4 Cup
  • Butter – 1 Tbs
  • Chicken/ Vegetable Stock – 2 Cups
  • Corn Flour – 2 Tbs
  • Salt – To Taste

 

Method:

  1. Wash and place the lettuce leaves on a bed of ice
  2. In a separate bowl mix corn flour and the chicken/ vegetable stock. Keep aside
  3. Heat olive oil in a pan, add onion, garlic, ginger and green chillies. Fry until translucent or slightly tender (Cook on medium heat)
  4. Add black pepper and soy sauce. Fry for a minute
  5. Add all the vegetables and fry for 2-3 minutes
  6. Add butter and fry for another minute
  7. Now add the chicken/ vegetable stock mixture to the pan and bring it to boil (Stir the mixture before pouring)
  8. Cook the sauce on medium heat until the vegetables are cooked. (Do not overcook)
  9. Add salt and mix well. Let the sauce cool for about 5 min, until it’s lukewarm
  10. Gently smear the leaves with peanut sauce
  11. Arrange lettuce on a plate and pour the sauce over the cold leaves
  12. Roll the lettuce like a burrito

Tips:

  • The peanut sauce is super duper spicy, reduce the quantity of red pepper flakes if needed
  • Be careful while handling the lettuce leaves, they are extremely delicate
