Rainy Day Fix!

A rainy day calls for a hot bowl of curry and rice! I decided to make a fusion of two creamy tomato curry (or saar) recipes I learnt from my mother and aunt.

Ingredients:

  • Tomato – 3 medium
  • Ghee – 2 Tbs
  • Cumin seeds – 1/2 Tsp
  • Dry Red Chillies – 2 or 4
  • Garlic – 1 minced clove
  • Curry Leaves – 4 or 5
  • Coconut Milk – 1/2 Can or 200 ml
  • Salt – To taste
  • Black Pepper – 1/4 Tsp
  • Sugar – 1/2 Tsp (Optional)

 

Method:

  1. Boil the tomatoes in a pan until the skin starts peeling off and set them aside to cool slightly (Don’t throw away the water, you’ll need it in step 5)
  2. Skin the tomatoes and churn them in a blender to form a puree
  3. Strain the tomato puree to get rid of the seeds
  4. Heat 2 Tbs ghee in a pan, add cumin seeds, dry red chillies, garlic and curry leaves and fry for a minute
  5. Add the tomato puree and bring it to boil, add water (from step 1) to adjust the consistency
  6. Reduce the heat and let it boil for 10 min
  7. Now add coconut milk, black pepper and salt. Let the mixture boil for another 10 min
  8. If the curry is too sour for you add 1/2 Tsp sugar

 

Enjoy with steamed rice and salted Pringles! πŸ˜‰
