Cupcake Chronicles!

Currently I am obsessed with baking! I bake almost every alternate day, trying and testing different kinds of flour, that’s when I came across Coconut Flour!! The experiment was a huge success. I say this because I baked 15 and was left with only 3 cupcakes and a miniature sailboat!

Ingredients:

  • Vegetable oil/ Melted butter – 1/2 cup
  • White granulated sugar – 2/3 cup
  • Salt – 1/2 tsp
  • Vanilla extract – 2 tsp
  • Eggs – 6 large
  • Milk – 2 tbs
  • Unsweetened cocoa powder – 2 tbs
  • Coconut Flour – 1/2 cup
  • Baking powder – 1 tsp

Method:

  1. Preheat the oven to 350 degrees F and line a muffin pan with cupcake liners of your choice
  2. Mix the oil, sugar, salt, vanilla and eggs. (Beat the eggs separately in a bowl first and then add it to this mixture)
  3. Add milk and cocoa powder, whisk until it forms a smooth paste
  4. Sift coconut flour and baking powder in a separate bowl and then add it to the wet ingredients, stir well for a lump free batter
  5. Fill the cupcake liners evenly (about 3/4 full)
  6. Bake the cupcakes in the oven for about 18-20 min, cook until a tester toothpick comes out clean
  7. Remove the cupcakes from the oven and let them cool for about 5 min and then turn them over on a cooling rack
