Meal for One!

My dinner recipes are generally elaborate and my husband falls prey to these experiments hook, line and sinker. But afternoons are generally spent alone while making easy and fuss-free meals. Honestly, I hate the idea of using two pans with pasta boiling in one and cooking the sauce in a separate pan because it’s too much work for 1 hungry person. This is the best one-pot-pasta recipe I have come across. Quick, easy and filling!




  • Olive oil – 2 tbs
  • Onion – 1/4 cup
  • Garlic – 3 small or 2 medium cloves
  • Sun dried tomato – 2 or 3 slices ( fresh tomato – 1/4 cup)
  • Italian seasoning – 2 1/2 tsp (to your taste)
  • Salt & pepper – to taste
  • Green peas – 2 tbs approx
  • Sweet corn – 2 tbs approx
  • Mushroom – 1/4 cup
  • Bell pepper – 1/4 cup
  • Spinach – handful
  • Green onion – for garnish
  • Chicken/ vegetable stock – 2 cups ( add 1/2 cup more if needed)
  • Pasta of your choice – 1 1/2 cup, Spaghetti – Handful


  1. Heat 2 tbs olive oil in a pan, add onion and garlic and fry until translucent
  2. Add chopped tomato and sprinkle the Italian seasoning and fry for another 2-3 min
  3. Add the rest of the veggies  (except spinach) and keep frying until the veggies soften a little
  4. Add chicken/ vegetable stock and bring the mixture to boil
  5. Add the pasta of your choice to this boiling mixture and mix well
  6. Add spinach
  7. Cover the vessel with a lid for about 5-10 min
  8. Check if the pasta is cooked, add more stock if required
  9. Serve hot in a bowl, sprinkle green onion and some Parmesan cheese

Enjoy with a slice of garlic bread and a glass or three of wine! 🙂


  1. If you like spicy food add chopped green chillies or dried red chillies with onion and garlic
  2. For an extra flavor add a tablespoon of basil pesto towards the end
